Red Because of Lots of Food Coloring Cake

It's almost Valentine's Day, and you know what that means-Red Velvet EVERYTHING! Red velvet cakes, red velvet cupcakes, red velvet pancakes...you see my point. I have never been a fan of red velvet. Semi-chocolate cake? Boring. I don't much care for regular chocolate most of the time, because it is always so one note: chocolate cake with fudge frosting. There's no variation, no contrasting flavors.

Anywho, I have tried red velvet cake several times and never seen what all the fuss is about. When I put the word out to the internets in the form of Facebook, I got several responses. Some love red velvet, some, like me, don't understand what is so great about it. One friend gave me her recipe for real Appalachian red velvet cake. I think I should give it a go and see if I really don't like it, or if I have just had inferior red velvet cakes in the past. When I do, I will post the recipe and photos here and give my verdict on the subject.

    For me, one of the biggest turn-offs of red velvet is the fact that often when I've had some it's tasted really bitter. I'm wondering if it's because of too much food coloring?
    Half chocolate cakes don't really catch my taste-buds, either. It's like the baker couldn't make up their mind. "Do I want to go with chocolate or not? I don't know! Let's do half-chocolate! That'll make everybody happy, right?" Meh.
    In defense of chocolate cakes: Chocolate cakes do't HAVE to be boring. People just make it that way. Who says we can't have a chocolate carrot cake, or chocolate pumpkin, or even chocolate with vanilla frosting? Vanilla cake with chocolate frosting is made all the time! The only thing stopping interesting, delicious, out of the ordinary chocolate cakes being baked is the tendency to rely on the "tried and true" instead of using a little imagination, and some trial and error.
    However, I won't turn my nose up at any cake that someone asks me to be a test gerbil on!
